Makes 4 servings
1 cup red cabbage fine sliced
1 cup white cabbage fine sliced
1 carrot julienned into fine strips
½ red pepper – fine sliced
½ yellow pepper – fine sliced
½ orange pepper – fine sliced
½ cup cilantro or flat leaf Italian parsley
2 green onions sliced
2 tbs Lime juice
1 tbs white wine vinegar or apple cider vinegar
1 tbs Safflower Oil or Avocado oil
Sea salt and pepper to taste
Mix all ingredients together and serve, will last two days in the fridge.
