1 lb Tomatillos * (see notes)
½ White Onion
2 Serrano Chili
2 Garlic Cloves
1 small Romaine Lettuce Heart* (see notes)
½ large ripe avocado
1.5 tsp Sea Salt, test to taste
Use a Vitamix blender (or a food processor)
*Use smaller tomatillos as they aren’t bitter and have a more concentrated flavour.
*Use the center of the romaine lettuce.
Remove skin and stem of the tomatillos.
Rough Chop the white onion.
Remove the stem of the Serrano Chili, cut them lengthwise.
Remove the hard root part of the garlic cloves, cut in half lengthwise.
Cut into quarters lengthwise – use the center of any lettuce
Cut avocado in half and set aside the other half for another recipe.
Combine all the ingredients in a vitamix blender or food processor until just smooth.
Taste and season beautifully with extra salt, if needed.
Serve immediately and enjoy!
