Tatemada means blistered or burned, prepared using a food processor. Everything is roasted. This is an intense sauce that can be used in a quesadilla.
Put a small pot of water on the stove and bring water to boil and turn off.
Heat dry skillet to blister the chili – high heat.
* Small Tomatillos (concentrated flavor, not bitter)
*4 Roma Tomatoes (Cut off-centre lengthwise to remove the tough tomato stem from the one side)
Use a Vitamix blender (or a food processor)
Store covered in the fridge, and it will last up to two weeks.
